Ground up some thin Ribeyes, ground pork, seven different Chile varieties, etc... Good complex heat. Let it fester overnight.

I get my stuff from the local Supermercado, and found these:
Manzana Chile Peppers
They called it a "Peron". Very nice.
Wow, that made for a long day. I bet it was loads of fun. Like Disir, I am curious about the other chilies you used in addition to the Peron.Well, I made the podium. Barely.

What other chilies did you use?
My favorite is guajillo. Someday I want to make a chili using those and build on that. I am curious about your chilies.

“Recently, I was honored to be selected as a judge at a chili cook-off. The original person called in sick at the last moment and I happened to be standing there at the judge’s table, asking for directions to the Coors Light truck, when the call came in… I was assured by the other two judges (Native New Mexicans) that the chili wouldn’t be all that spicy; and, besides, they told me I could have free beer during the tasting, so I accepted and became Judge 3.”Ground up some thin Ribeyes, ground pork, seven different Chile varieties, etc...
