I’ve cleaned a few Toms, but they’ve all been wild, so the majority of the meat is from the breast.

I never butchered a Turkey myself, but learned on rabbits and chickens when I was just a boy.
 
That's too much work. My neighbor had 5 big ones out back up until a week ago. Knowing them there's no way they went through anything like that. Being equipped to scald them before plucking must save tons of time and effort.
