The first time I made it, we were stunned. How is this possible, intense-bold flavor with just tomato water.
The most critical element of this recipe is finishing it. In the video you will see how he finishes the pasta in tomato water/butter. You cannot shorten this step. If you do - your pasta will be watery and unremarkable.

my grandmother who was from Italy cooked things like that all the time when i was growing up....her house when she was cooking smelled like the sauce she was cooking up....i couldnt wait for sundays...home cooked pasta....
