....I follow Latifs Inspired on YouTube. This is his latest video -




I've made loads of his dishes and written them up in a book. I write down the list of ingredients he puts in the comments section, I double check them to what he actually uses in the video (sometimes there's a discrepancy), and I write down how he goes about making the meal. Then I write it up.

So I have his tomato purée and the garlic & ginger mix in tablespoon sized cubes in the freezer, from his recipes. He makes a base gravy, but he makes one with a chap that worked with his dad, he puts a full chicken in!! That gravy is in 450ml frozen blocks in the freezer and damn nice.

I have more spices than hairs on my backside and in jars, Pathia mix, Dupiaza mix, Panch Phoron etc..

There are two ways to make Indian meals -

BIR (British Indian Restaurant), it's where you have precook meats, base gravy's, purée etc.. So it just takes 10 to 15 mins to make a meal because all the prep was done on a different day

One Pot, it's where every ingredient is individually put in with raw meat and cooked for 45 to 60 mins

I tend to have the tandoori chicken wings, creamy chicken tikka masala, and paneer Dupiaza quite often.

Oh, and his nann bread works, but you need a gas flame.

Do you work full-time?

I don't understand how people can work, and still find the time to cook. Like I really cannot comprehend it. The actual cooking process itself can easily take an hour, sometimes longer (although of course, sometimes shorter, too). But, you also have to go grocery-shopping, wash the veggies, chop meat/marinate meat, and you also have to wash the dishes afterwards, too. And that's just one meal, and there are three meals a day. Like, I don't know how people do it.

Over the last few months, Latif went on a diet so he's been posting healthier meals, I just make and eat the full fat ones

What I've seen people do is prepare 2-3 big pot meals on the weekends and freeze them and take them out as needed during the week. And that woman worked full time. She was very organized and disciplined.

I know; but previously-frozen food doesn't taste as good though.
