Epstein is Jewish and Jews (American ones, anyway) usually pronounce names with -stein as "steen", so I just follow suit with that. However, I fully realize that a German gentile would be compelled to say "STINE".

In German, “ei” is always pronounced “aye” like the letter I, and “ie” is always pronounced “ee” like the letter E

This doesn’t always carry over when German words are said in English
