(I have no idea why they would show the picture of a Holstein cow. They produce a lot of milk but have far less cream content than other breeds)
We read about it but few of us take the time to check out what it’s all about.
It all comes down to Ultrafiltered Milk. (What the heck is that?
We’re in a “butter is good” cycle which means dairy farmers are now skimming off the cream to make butter. What’s left over is the surplus causing all the fuss because Canada doesn’t want it – it has too much of its own.
Could it be sold elsewhere? Probably not due to transportation costs.
