This is so easy, and yummy. And you can't mess it up. Ingredients: 1-2 Rice a Ronis (I use chicken, but probably just about any flavor would work) Shrimp...I get a pound of small, frozen, deveined, cooked. Less or more, really makes little difference. Cashews...whole, salted, any size depending on how much you like them Marinated artichoke hearts...1 or 2 small jars Curry to taste. Make the rice-a-roni. Dump in the shrimp, cashews, artichoke hearts (I drain them, but it probably doesn't make any difference). Put in some curry. This stuff is SOOOOOO good. And you can eat it warm or cold. If you're going to eat it cold, I'd leave the oil on the artichoke hearts so it doesn't dry out too much. Yummy. Happy Thanksgiving.
