The headphones work because the sensor has time to read the incoming frequency and introduce an inverted signal at the same frequency to nullify the original sound. Audio frequencies rang up to 20,000 Hz. Cell phone transmitting frequency is about 1,900,000,000 Hz. Timing would be a lot harder.
