Meatballs...... 2 slices white sandwich bread (crusts discarded), torn into small pieces 1/2 cup buttermilk or 6 tablespoons plain yogurt thinned with 2 tablespoons whole milk...Note:you can use 1/2 C milk. 1 pound ground meat (preferably 3/4 pound ground chuck and 1/4 pound ground pork) 1/4 cup freshly grated Parmesan cheese. Note: the can stuff is okay. 2 tablespoons finely minced fresh parsley leaves (If you want) 1 large egg yolk 1 teaspoon finely minced garlic (or powder) 3/4 teaspoon salt Ground black pepper About 1 1/4 cups vegetable oil for pan-frying Then into the sauce... Last Note: Add egg yolk first...add other liquid... buttermilk, whole milk etc. to your desired moistness you may not need the full 1/2 cup.
