And when a lot of harvesting happens AT THE SAME TIME, you need workers to work at those times. You can't just spread it out over the year.

Apples are grown all year round. Fall just happens to be the peak season. June is peak season for blueberries and strawberries. Watermelon peaks in July and August. Grapefruit is readily avail. in winter. And on and on.
