Depends. Sealed tightly, the oxygen will get used up quickly, moisture and worms will be sealed out slowing the decomposition.

Fastest way to do it is to just drop dead on the floor of the woods in a pile of wet leaves and let the rain get at you, keeping you damp, so that the flies and worms, and fungus can all get at you, so finally, the forest animals can tear you apart and spread you around feeding their young.
