I Love Cornbread

There is bi-partisan support in Georgia to make cornbread the official bread of Georgia.
IMO, cornbread, when made properly, is the best bread ever.
I use Jiffy mix in a square cast iron skillet. Mom used the same mix but in a square steel baking pan.
For some reason her cornbread tasted better. I'm sure the Jiffy mix ingredients have changed.



Make it from scratch,it's really simple.
When the Wife and I make cornbread we make enough mix for four batches.
We use a round cast iron pan,coat it with lard and put it in the oven to preheat.
Then we pour the batter in and bake until a toothpick comes out clean.
The bottom and top comes out a golden brown and slightly crunchy.
