I think I've posted it before...

4 cups peeled, cored, cubed apples.

2 c flour
2 c sugar
2 t vanilla
2 t soda
1 t salt
2 t cinnamon
2 eggs
1 c oil

Mix dry ingredients together (not apples)
mix oil eggs and vanilla together.
mix oil mixture in with dry ingredients, will be stiff, dry mixture.

mix in with apples, apples will cause mixture to soften and become batterlike.

bake in 350 oven, 13x9 greased pan, 45 min.

it's good hot with whipped cream. It's even better on days two and three if it lasts. Mine didn't this time, kids decimated it.

I have the happy problem of lots of apples to use. I'm going to try this!

Sounds delicious!
it's pretty stinkin good. I've iced it with cream cheese frosting, too, which I think improves it, but it is also good on it's own. Granny smiths work best but I've used all kinds of apples...including old grainy ones, and it is still yum.

Is this an actual apple cake or is it more of an apple pie?

When I was in Texas I was fed an Apple Sauce Cake and it was very good, it looked a bit like this picture below.
