Include or Omit the Tax When Tipping?

When you tip, do you tip on the total, or just on the food and drinks? In other words, do make your tip calculations without including the tax?

After twenty-five years, my wife just figured out that I omit the tax when calculating the tip. Why would anyone tip on the tax?
The total amount and I usually do twenty percent unless it is a place I will repeat my business then it will go up from thirty-five to fifty percent if things are done properly and they remember me the next time…
 
And just FYI, you folks know that cow tipping not a real thing, right? Just something country folk told city folk. It doesn't happen.
You know I could tell you a story bout the exploding cow up in Oregon many moons ago and what caused it was the tipping point of a argument between this man and the land owner and the land owner shooting this man girlfriend dog…

But that story might get the ATF knocking at my door and no it was not me but I lived there and we never went cow tipping even when we were tipsy…
