Steak... Cold sear method...

Never seen this method before...


I've used that method before.

A clamshell grill like one of those George Foreman grills will get you the same result a lot quicker. Plus you don't have to keep flipping the steak over and over again because it cooks the steak from both sides at the same time. And the rendered fat (aka beef tallow) flows conveniently into a tray.

I use beef tallow to fry french fries. McDonalds used to do that too decades ago. That's why their fries used to taste so good.

Sorry I am a pig. Steak dipped in barely melted ghee (clarified butter) with a generous portion of salt and freshly ground pepper on a 500 degree grill.
 
20 minutes in a touch of canola oil marinade, rub in a good amount of salt and ground whole peppercorns, very hot stovetop cold pan cold steak quick but complete sear, finish in 350 oven for 5-10 minutes. Throw a pad of garlic butter on top as soon as it comes out if desired.

Thats interesting. I'm going to have to try it.
I thought this was going to go in a different direction.
We were visiting some relatives in Canada and my cousin took a roast out of the freezer and put it on the grill still frozen.
Of course I told her she was crazy but what do ya know,it came out perfect.
I'm assuming the frozen interior kept it from being over done in the center.
Haven't tried it myself but it did work.
