Southern Fried Chicken and

-Homemade Mashed Potatoes w/gravy on side
-corn on the cob
-Homemade corn bread

with...

either one of these choices....pick one only, as your first choice....you can list a second favorite if you must!

1. Turnip, Collard, or Mustard greens

2. Butter beans

3. Spinach

4. Blackeyed peas

5. Okra

6. dirty or white rice
 
Fresh grilled Tuna steak on the grill.
Rice Pilaf
Steamed asparagus
Homemade yeast rolls.
Salad.
Lemon meringue pie for desert.

Housekeeper is shoppin and cookin again :clap2:
I grilled the tuna though.

BBQ is this weekend.

You buy about a 5-10 lb whole pork loin. size deopends on how big the crowd is.
Pressure cook it till done, time depends on weight.
Drain well. at least 20 min.
drench in your fav BBQ sauce and herbs, etc.
put on grill still mopping on sauce till good and brown.

The pressure cooking opens up the grain of the meat allowing the saue to penetrate and guarantees that the meat ie pork is well cooked and safe. It also removes a lot of the fat.

Quite yummy and tender.


You now have one of my BBQ secrets.

More to come as the BBQ season progresses.

is the orka fried? if so, that is my side....

we had thai food....da man changed my order from med to hot...to just med...i was a little ticked at him till i tasted the medium...omg...that was hot!!!
 
A friend did Peace corps in Thailand. She introduced me to Thai food when she came back. I had some medium curry. I have never forgiven her for that. They must wean their kids on chili peppers. There is hot, very hot, and then there is Thai.
 
I had my sister's cleaning lady make me eggplant curry (she had a Thai restaurant) and told her VERY VERY MILD.
It burned the shit out of my life.

Love fried okra, nothing gross about it.

Wouldn't eat rice with mashed potatoes and gravy, though, so it would have to be spinach, mustard or baby beet greens.
 
Tonight's Dinner:

-Angus Beef Steak. A1 Sauce with the Steak. :)

-Grilled Zucchini.

-Roasted Sliced Potatoes.

-House-made Salad.

Glass Of Wine. (Spanish, La Rioja.)

And for Desert.. Fresh Strawberries.

And Your dinner sounds pretty delicious.. of course I haven't had that type of Meal in a while.. Makes me wanna make some Fried Chicken.

I have never found Angus steak to be any different than any other steak. They're black cows.

Southern fried chicken:

Soak chicken pieces in buttermilk over night
Shake off and roll in flour, salt & pepper, let sit a few minutes, roll again.

Fry in a few inches of oil, medium heat, until browned.
Put in the oven at 350 for about a half hour to finish

Then there's regular fried chicken:
Roll chicken in flour
Fry until brown
Put into pan and bake until meat falls off the bone...

And chicken fricassee...

Cook as above (or you can southern fry it)
Put in a deep 13x9 pan, crowd the pieces, can have more than one layer if your pan is deep enough.
Put a couple of inches of water in pan, cover it, bake @ 350 for about an hour.

Yum. Yum. Yum.

Homemade chicken nuggets:
Chicken breasts, cut into nugget size
Dredge with flour/salt/pepper

Let sit
Heat foil covered cookie sheet in oven @ about 400 degrees
Put a stick of butter on the sheet when it's hot, let it melt. When it's hot...
Drop the chicken pieces in.

Cook for about 20 minutes or until bottoms brown. Turn, cook until that side is brown.

They are yummy, kids dig them. I think they're cheaper than prepared chicken fingers/nuggets.
 
Angus is a big marketing ploy though and it works.
I am not sure there are enough Angus cattle to produce all the Angus steak and burger sold though.
 
I guess there are red angus now, too.

I brought 6 angus bulls down from the mountains once. Bulls are easier than the stupid mama cows, I almost killed my horse going after one really obnoxious old cow. She went down into a gully, into the brush, and on the very point of this weird sandy spit, the old bitch. I couldn't get around her, I could just look at her. I think I ended up leaving her there. I hope she died a miserable death. My horse certainly almost did.
 
Tonight:

Grilled Salmon
Tossed Salad
Focaccia (with rosemary)
Fresh Strawberries

(I'd pick butter beans for the side with Fried Chicken. :) )
 
I love Southern Fried Chicken. I eat it about once or twice a year but would eat it once or twice a week if it wasn't so bad for you.


Indeed.

If I had one month to live, I'd have Fried Chicken and BACON every day.
