Parmesan Potato Balls

These little puppies are just good! :)

3 lg. or 4 med. potatoes, peeled & cubed
2 oz. cream cheese, softened
2 Tbsp. milk
1 Tbsp. butter
1/4 cup grated parmesan
1 Tbsp. chopped onion
2 1/2 tsp. onion soup mix
1/2 tsp. salt
1/8 tsp. hot pepper sauce
dash pepper
1 egg, beaten
1 1/2 cups crushed corn flakes

* Place potatoes in lg. saucepan. Cover with water & bring to a boil. Reduce heat, cover & simmer 15-20 min or until tender. Drain.
* In lg bowl, mash potatoes, beat in cream cheese, milk, & butter until smooth.
*Stir in parmesan, soup mix, onion, hot sauce, salt & pepper. Shape into 1-1 1/2 inch balls.
* Place egg & cornflakes in separate shallow bowls. Dip balls in egg, then roll in crumbs.
*Place on ungreased baking sheet. Bake at 400, 15-18 minutes or until crisp & golden brown.


I like to dip them in ranch dressing, because food is always more fun when it's dipped. :)
