Spaghetti Sauce

3/4 cup chopped onions
1 tsp. garlic salt
1 tsp. shortening
1 cup water
2 1/2 cups diced tomatoes (or 2 cans)
2 6oz cans tomato paste
1 Tbsp. sugar
1 tsp. salt
1/8 tsp. pepper
1 bay leaf
1 1/2 tsp. dried oregano (or 3 tsp. fresh minced)
1/2 tsp. dried basil (or 1 1/2 tsp. fresh minced)
1/4 tsp. ground marjoram
1/4 tsp. ground thyme

Meatballs
1 lb. spaghetti, cooked

* Cook onions with garlic salt in shortening until tender.
* Add water, tomatoes, tomato paste, & spices.
* Simmer 1 hour. Add meatballs & heat through. Serve over spaghetti.

Except for the shortening...I use butter or margerine and fresh garlic cloves while cooking the onions...I do sprinkle the meat balls with garlic salt and pepper while browning them...and I use Italian style stewed tomatoes...not diced as they cook down! And the secret ingrediant my G/ma taught me use about two teaspoons of sugar to take the acid taste outta the tomatoes!

Sometimes I use fresh garlic, too. And olive oil instead of shortening. And, if I'm lazy, I use canned diced tomatoes intead of chopping fresh ones.
