Canning guidelines

If you are considering learning how to can foods, you need to know the best methods to keep your family safe & well fed. Things like botulism can make you sick or even kill you. But don't let that scare you from doing it, you just have to be very careful, keep everything clean & sanitized before & during processing and that includes proper storage of canned foods after processing. Processing low acid foods (meats, fish, seafoods, & veggies) in a pressure canner to reach 240 degrees will kill any bot spores. High acid foods such as fruits, pickles and some tomatoes (though you can add some lemon juice, ascorbic acid, vinegar or high acid tomato varieties) are processed in a water bath.

One other note...…..there is also a bacteria that actually loves heat and causes what is called 'Flat Sour' that can happen with corn, beans, peas & asparagus. It is not a poison and will NOT kill you like botulism, but it sure does taste nasty. This can happen even in store bought canned foods, though it is rare.

I have to admit it has been a few years since I have done this process and will need some reeducation. Right now I am not even sure where I can go to buy the things to get my garden started every thing is closed and I just recently got my property back though divorce. Most years I would be far ahead of where I am at this point. I have not even decided what I am growing beyond tomatoes and spices. I have catching up to do.

I'd suggest starting at Walmart, that would have a little of everything needed...…...hopefully. If not there, then a hardware store that has a gardening or plant nursery section. Even in lockdown, both are an essential business.

ya, and spear miont and pepper mint will take the hell over. gardens take some planning. I gotta get on it soon.

Yes....like yesterday. Stuff like gardening & canning equipment is going fast. IF you choose to grow anything in the mint family, you're better off planting in large pots that will contain the spread.

walmart is my only choice at this point. what kills me is there is a much bettter nursery and much closer closed. I am ready for the world to reopen, this is getting old in a hurry.

I do agree...….but I've come to the conclusion that 'facts' don't matter as much as what people BELIEVE the 'facts' are. IF they believe it's the end of the world, you have to be able to go with the punches or you're going to be left behind when the world ends just because everyone thought it did.
