Advice on both my employees

My last employee was amazing at upselling
She was killing the sales
Unfortunately she quit after only 3 months

I even was paying her very well and I gave her extra hours too

You said they were stable, mature and reliable. A thing that's been impossible to achieve in the last 4.5 years.

I've been a manager and/or supervisor a lot of years. In my book, those 3 qualities are priceless. Especially in

positions that don't pay that well.

If you treat your employees well, with respect and appreciation, I think you'd find they'll return the favor and have better work habits as well.

Go ahead and cause good employees to quit, you're only hurting yourself.
 
Why not hire a third employee and then let go the one that brings in the less sales over a certain period of time? Or instead of firing one perhaps temporarily keep the two laggers on as part time to see if that gets the message across to one of them.
