I quit buying chicken meat nearly twenty years ago as it had this really nasty look in it. So today as I was researching I came across this really cool website. I recognize some of the looks in the photos as something that looked very similar to what I saw in store bought chicken. The following is that site if you are curious. The pathology of chicken diseases may be too gross for some of y'all but I like to know what it is I may be seeing in the food before it gets cooked. E. Coli, Candida infections, Salmonella and many more listed on this site.

Growing up (barely) with my Mom's undercooing of everything including chicken I've only managed to survive by cooking everything a second time if she made it. And if I'm doing it all I bake everything at 500F and until well-done, or as my stepdad used to tease, "burnt." :)
