It celebrates a battle in which the French were defeated. The French still went on to capture Mexico City and install a puppet Emperor before they were finally defeated and driven out of Mexico.

The fight to push the French out was supported at the time in the US (Lincoln) because it was in line with the Monroe Doctrine of keeping Europe out of North American affairs.
Lincoln likely would had commited troops to it if it weren't for the civil war. In fact the US did send down troops after the civil war to help the Mexicans out.

The American holiday however, has been highjacked by Mexican-Americans to celebrate their race and heritage. It's not even really celebrated in Mexico I believe.

I'm sure they don't celibrate V-E Day May 8th. The gringos stopped killing each other in WW2 and noticed that the arming of Mexicans was a waste of supplies.

I googled Violence Mars San Jose Cinco De Mayo Celebration and watched some news footage of what looked like nothing special. The bars looked pretty upscale. The white ones that is. Just some Mexicans waving Mexican flags. No big deal.
