They didn't have cattle, goats, sheep, pigs, chickens, or any of the other domesticated animals Europeans brought.

Rice came from Indian via Manila.
Flour came from grains brought from Europe.
Tomatoes are from Peru.
Onions came from Europe.

The only truly "authentic" items are maize, beans, squash, chilis, and seafood.

Oh yeah - no cheese on tacos or burritos or any of the rest because they had no dairy animals.

Is this an argument that authentic Mexican food is bland(even with Spanish influence)

Or an argument that the introduction of diverse products from different cultures is the key to modern Mexican cuisine?
