Steaming seafood

This is an investigation into steaming fish.

Is it true that I can steam any fresh fish? Or is there a type of fish I should stick too?

What is the best type of fish to steam?

Is Publix fish fresh enough to steam? Or should I travel several miles to the nearest fish market and obtain fresh fish?

I have a 2 Lev bamboo steamer and wok. When steaming, should I place the fish on top and veggies on bottom, or does it matter?

I may have other questions about steaming fish and other seafood like prawns and so forth. Some week in July, I plan to taste different types of seafood and plan to either steam or grill it. I hear steaming is the preferred method of cooking fish when it is fresh. So, I plan to primarily steam fish.

There maybe more questions overtime.
 
Dunno, I generally bake or grill fish, just because it's easier to handle. Shrimp I usually steam, along with the veggies. If the latter are frozen I'll let them get started first so as not to overcook.

I doubt we can make a general statement about Publix, depends on the store. But the ones I've seen have pretty good standards.
