Curried Apple Soup
Ingredients

1 tablespoon unsalted butter
2 shallots, minced
2 teaspoons freshly grated ginger
1 1/2 tablespoons curry powder
2 Granny Smith apples, peeled, cored, and cut into 1-inch pieces
1 small russet potato, peeled and cut into 1-inch pieces
1 teaspoon coarse salt, plus more for seasoning
3 3/4 cups homemade or low-sodium canned chicken stock
1/2 cup heavy cream or milk
Freshly ground pepper
Sour cream, for garnish

Directions

Melt butter in a medium saucepan over medium heat. Add shallots; cook until soft and translucent, about 2 minutes. Add ginger and curry powder; cook, stirring, 1 minute. Add apples, potato, salt, and chicken stock. Bring to a simmer over medium-high heat, and cook until potato is tender when pierced with a paring knife, about 12 minutes. Remove from heat, and let cool slightly.
Use an immersion blender, or transfer mixture to the jar of a blender, working in batches if necessary so as not to fill more than halfway; puree just until smooth (do not overprocess). Return soup to pan; stir in cream, and season with salt and pepper. Place over medium heat until soup is just heated through; do not let it boil. Divide soup among serving bowls, and garnish with sour cream.
 
My mom taught me a neat trick when I was a kid. She was getting ready for a party and it was late, she wanted to make ham salad and realized she only had about a quarter lb of ham.
She ground the ham with about a lb of bologna, made the salad and let it blend overnight. No one at the party realized it was only 1/3rd ham and it disappeared.

For mine:
1 7oz ham steak, diced
1/2 a ring bologna or half a package of sliced bologna, diced

Place in blender or food processor and grind til meat is finely ground

1/4 small onion
1 stalk celery, chopped
1/4 cup shredded carrots
1/4 cup shredded red cabbage

Place all the above in blender or food processor til finely chopped

Put all ingredients in a mixing bowl and add

1/2 tsp dill weed
1/4 tsp mustard powder
Mayonnaise, to taste

Mix all the ingredients til well blended, cover and let sit overnight in the refrigerator.
 
1 bag tart apples (about 10 apples)
4 tsps lemon juice (I use concentrate)
1/4 tsp vanilla
1 1/4 cups rolled oats
1 cup brown sugar (packed if you like it really sweet)
1/2 tsp cinnamon
1/2 cup butter (1 stick) softened to room temperature

Pre-heat oven to 375

Core and peal apples
Toss with vanilla and lemon juice
Layer in 9x12 inch Pyrex baking pan

Mix oats, sugar and cinnamon, cut in butter then sprinkle over apples

Bake for 45 minutes.

Serve with vanilla ice cream or whipped cream.
 
Low Sodium Taco Seasoning Mix

6 tsp. Chili Powder

5 tsp. paprika

4 1/2 tsp. cumin

2 1/2 tsp. Garlic Powder

3 tsp. Onion Powder

1/4 tsp. Cayenne Pepper

You can add a little salt if you wish.
I use 1/2 tsp of low sodium salt.

Mexican Mush

1 lb hamberger

1 small onion diced

1 clove garlic

1 can refried beans

1/4 cup shredded cheese (I use sharp cheddar)

1/2 bottle of salsa (choice of brand, mild, hot or spicy is up to you)

Optional:
1 small can sliced jalapenos

Brown hamburger, remove and add onions and crushed garlic, cook til onions are opaque.
Put hamburger back in skillet, add 1/2 cup water and 1 1/4 tbsp of seasoning mix, cook for one minute.
Add refried beans, salsa and cheese, (jalapenos if desired), cook til mixture is hot.

Serve as a dip with tortilla chips or in burrito or tostada form with diced tomatoes and lettuce. Can also be mixed with cooked rice.
 
One of my favorite desserts:

Top and tail a pineapple and throw it in the oven for around an hour on low/medium.

When it's soft, peel it and throw some cinnamon sugar on it. (I sometimes throw a splash of spiced rum on it too)

Eat.

Yum.
 
Tuna Wontons

Cut wonton wrappers diagonally and fry until crispy

Wasabi Cream Sauce

8 Tbs heavy cream
2 Tbs Butter
1 shallot diced fine
1Tbs of tamari or soy sauce
4Tbs of wasabi paste

Sweat shallots in butter until translucent (do not brown)
Add cream and gently boil for 4 minutes
Add Tamari
Remove from heat and whisk in the wasabi paste

adjust to taste.

Use sushi grade tuna if possible

Lightly sear tuna on all sides and slice thinly

Arrange wontons on a platter place a slice of tuna on each drizzle with the wasabi sauce and sriacha

Garnish with pickled ginger and scallions

Damn if I didn't find a recipe...

Lentil Cheddar Casserole
Makes 4 servings Ingredients:1 cup lentils, rinsed
1 cup chopped onion, divided
1/2 teaspoon thyme
1/4 teaspoon salt
3 cups water
1/2 cup chopped green pepper
2 cloves garlic, minced
2 tablespoons cooking oil
1 (16-ounce) can stewed tomatoes
1 (12-ounce) can SPAM Classic, diced
1/4 teaspoon pepper
1 (4-ounce) cup shredded Cheddar cheese Directions:1. Preheat oven to 350 degrees F. Combine lentils, 1/2 cup onion, thyme, salt and water in a pot and bring to a boil. Reduce heat to medium low and simmer 40 minutes or until lentils are tender and almost all the water is absorbed. 2. Saute green pepper, garlic and the rest of the onion in oil until tender. Mix in tomatoes, SPAM, and pepper. Combine lentils and SPAM mixture into a 9-inch square baking dish. Top with cheese. Bake for 45 minutes or until cheese is melted and bubbly.

Spamalama Ding Dong Time!

- take two slices of SPAM
- put marshmallows inbetween
- dip in chocolate syrup
