Salmon patties

I may have posted these before...they're also called salmon croquettes. We had them for dinner tonight and they are fabulous.

Canned salmon runs less than $3 a can. I fed three preteens and moi with one batch....plus cooked home canned carrots on the side.

1 can salmon.
2 eggs
1 c Panko bread crumbs
3 tbsp mayo
Chopped gr onion
Pepper
Dill
Lemon juice
Pepper

Drain the salmon, dump into a bowl. Take out big circular back bones and ugly skin. Bones are soft from canning, don't worry about the straight bones. I like to mash the salmon up. Add all the rest of the ingredients, mix it up. Drop by big spoonfuls into hot oiled skillet, mazh a little flat. Fry till both sides are brown.

Totally yummy, the kids devoured them.
 
Mash flat, that is. Not mazh lol. You can play with seasonings. Some ppl put Old Bay seasoning in.....I like them better without. But I have mixed Old Bay into mayo and served it on the side. Fairly caloric but yum.
