RIP Paul Prudhomme

I think we have some redfish in the freezer that mr. boe caught awhile ago. Blackened redfish would be a fittin' tribute.
 
I just loved his restaurant, too. Not sure if it is still there but well worth it.

I make his southern biscuit muffins and banana muffins all the time.

I never went to his restaurant, but have enjoyed his recipes.

According to the OP article he went from 580 lbs. to 200 lbs. He was just over 5 feet tall.
