It needs something else in the filling, but a cinnamon roll pie crust sounds good.

Like Montrovant, I think the filling needs to be embellished a bit, but doing so need not be any more "involved" than is the basic recipe. Supplementing the sugar with maple syrup, or just using brown sugar instead of white sugar and adding a splash of one's preferred liqueur would probably do it. So would tossing in raisins or nuts.

That said, inasmuch as making the crust is the "tricky" part of making a pie, however, the cinnamon roll idea is well worth using.
