He was probably in transit, which means that he didn't actually enter Israel proper and was simply moving on. So the questioning would be limited based on that. And they can't follow him into the West Bank or Gaza to see what he was up to over there. I'm sure they would have either denied him entry or watched him with four eyes if he actually traveled into Israel.

Of course you get stamped. Non US citizens traveling in transit through the UK onward to other parts of Europe, middle east, or Africa not only get a stamp, they need to get an actual visa pasted on one of the passport pages prior to departure, even if you're just switching planes and won't leave the airport. The same goes with Russia, India, and China, which make even US citizens get actual visas, whether it be transit, tourist, or business. The reason for that is transit or not, you have landed on (entered) the soil of that country and you still need to clear customs for them to allow you to leave. This is the general rule, but not universally followed. Exactly where have you traveled "in transit"?!

According to the French, he was interviewed by Israeli police.

I can't speak for the Israelis but it would be fair to assume that he of course got interviewed, but the fact that he came from France and not a Muslim country probably gave him a cover that the Israelis could not see through. The Israelis interview everybody. Their interview and airport security is so good that they are now training many other countries. But you can't expect them to know what every Arab that eventually goes on into West Bank or Gaza is up to. There are about two million Israeli Arab Muslims living inside Israel as Israelis with full Israeli rights, and another about 3 million living in Gaza and West Bank from what I understand. Mohamed Merah may have just told them he's visiting a friend and they let him in because of that. Their job is to prevent possible terrorist attacks inside Israel, not if a Mohammed Merah is going to move back to France become a certified jihadist and go on an Islamic killing rampage. There are many potential Mohammed Merahs inside Gaza and West Bank.
