Lobster Tails - Any ideas?

As an app., i would go for bisque. Take the tails out of the shells and make lobster stock with them.

Or slice them into rounds, arrange them in individual dishes, dot with butter a bit of salt and pepper and top with some crushed ritz cracker crumbs and broil.
