My husband is going through this Lance Armstrong phase. He's riding his bike, reading biographies, ordering wristbands. So, of course, when he found Lance Armstrong's mom's banana bread recipe, I was required to make it. I have to say, it's the best banana bread I've ever had.

1 stick butter, softened
1 1/2 cups sugar
2 eggs
2 mashed bananas
1 tsp. vanilla
1 cup buttermilk
1 1/2 tsp. baking soda
2 cups flour
1/2 tsp. salt
1/2 cup chopped nuts (walnuts or pecans)

*Cream the butter, sugar, eggs, bananas, & vanilla.
* Mix buttermilk with soda. Add to banana mixture.
* Mix flour & salt. Add gradually to banana mixture.
* Stir in nuts.
* Bake at 350 for 1 hour, or until center is done.

I add a whole cup of nuts instead of a half cup, because I really like nuts.

Hmm suddenly I have a craving for Banana bread! Too bad I don't have a wife to force to make it for me. I might try making it myself lol.

Yes, Darin has pointed this out to me. Thank you. Glad I didn't put in the part about liking to lick the spoon!

You started it.

Love nuts..licking the spoon.

Look what you did to poor Darin.

It's your fault.

I'm consumed with guilt. Guess I'll have to go back to my Catholic church so I can confess.

Maybe after the banana bread cools. ;)

It's nothing, without the NUTS. :poke:
I think the buttermilk really adds to it.

Now let's see if you guys can twist THAT into something interesting. Winner gets rep. :D

Well, ya gotta massage the container before it becomes buttermilk. That really makes it better.
