My husband is going through this Lance Armstrong phase. He's riding his bike, reading biographies, ordering wristbands. So, of course, when he found Lance Armstrong's mom's banana bread recipe, I was required to make it. I have to say, it's the best banana bread I've ever had. 1 stick butter, softened 1 1/2 cups sugar 2 eggs 2 mashed bananas 1 tsp. vanilla 1 cup buttermilk 1 1/2 tsp. baking soda 2 cups flour 1/2 tsp. salt 1/2 cup chopped nuts (walnuts or pecans) *Cream the butter, sugar, eggs, bananas, & vanilla. * Mix buttermilk with soda. Add to banana mixture. * Mix flour & salt. Add gradually to banana mixture. * Stir in nuts. * Bake at 350 for 1 hour, or until center is done. I add a whole cup of nuts instead of a half cup, because I really like nuts.
