Lamb

I make my own gyros with ground lamb.
I have a meat slicer so it's basically making a lamb meat loaf and "almost" freezing it to be stiff enough to slice in gyro style rectangle slices.

1/4 onion, cut into small minces +
1 pound ground lamb +
1 pound ground beef +
1 tablespoon minced garlic +
shake over some dried oregano +
sprinkle dust of ground cumin +
shake or do of ground rosemary +
lightly dust ground dried thyme (very strong so carefully not to much)+
1 teaspoon ground black pepper +
1/4 teaspoon salt (I use Flavorcal popcorn flavoring salt 'cause it's processed not to be bitter and adds butter flavor going well with any meat.)
Mix these ingredients well, form into a meat loaf pan.
Cook at 325° for 55 minutes.
Refridge till ready to slice, then freeze for 15-20 minutes to make it firm enough to properly slice if using a slicer. Freeze for 5-10 if cutting by hand.

Tzatziki Sauce: plain greek yogurt
1 cucumber- peeled, seeded and diced
2 tablespoons olive oil
1/2 lemon, juiced or capful of bottled lemon juice
dash of salt and pepper
1 tablespoon chopped fresh dill or a few shakes of dry dill flakes
1 tablespoon of minced garlic.

Gyros have the lamb slices, the cucumber yogurt sauce, lettuce onion tomatoes in them like hoagies, but find the proper flat bread like Nan bread or Flatout's Foldit, pita bread only if neither is available.
