This is classic Asian cooking technique, soak meat on the bone in cold water for over night, and blench once to make sure almost of the blood will come out- for clear product. Believe or not, it does not take any flavor out because we are not boiling like an hour. It's only a minute to blench. :) Give it a try!

soak in cold water------ie make it kosher. ------blench is when
you sit on a tack and jump up------/A quick dunk in boiling water or oil
is BLANCH

Why soak them in water when you can marinate them in a good lager?

you want ALL guests to be able to eat. --------when entertaining people from
south east asia-------I serve ---chicken and lamb -----No pork ---no beef.
If you invite a vegan type hindu-----just give up
Sorry I cook how I cook if people don't like it then they can eat somewhere else
