When I went to work as a secretary in the 60s with a high school diploma it was minimum wage.

Back in the early 1950s I dated a girl who worked as an usher(ette) in the Brooklyn Fox Theater for minimum wage, which was .55 an hour. The upside was when she relieved the ticket puncher on his break we all walked in for free.

Well at least the yankees waited long enough for the slaves to show us how to cook and eat. The European diet was very bland. Here in the south, we have the best food in the country, thanks to the Africans who pepped up our diet in some incredibly creative ways. And blacks being good cooks is NOT a stereotype. They ARE good cooks. I have always really enjoyed the pot lucks at work, their food is definitely worth showing up for. And they keep up with the times. They know that the little packet of sweet and low in the turnip greens can make all the difference in the world.

There is a "soul food" restaurant on Lenox Avenue in Harlem (New York City), called Sylvia's. It's a Black enterprise with all Black cooks. It opened in the fifties, moved once to a larger location, and has since become famous and very successful. All sorts of City Hall bigwigs and celebrities go there, Whites come from all over, there always is a line at the take-out counter and cars double-parked outside. The barbecued ribs are by far the best I've ever tasted and now that I live in South Jersey I sometimes drive all the way into New York late at night just to go to Sylvia's in Harlem -- or to Katz's deli down on Houston Street (for the world's greatest pastrami sandwich on pumpernickel).

Sylvia's now markets canned collard greens and turnip greens which I found in a local super market and they are excellent (in case you're interested).

(I'm sitting here salivating thinking about Sylvia's and Katz's.)
