I usually grill flank steak for Fajitas

Absolutely love flank steak for fajitas.

I've done this one a few times

I also make a Guy Fieri's "Zing Zang Flank Steak" which is a flank steak stuffed with breadcrumbs, tomatoes, hot peppers, cheese and basil, then grilled.

really simple and really good. as someone else mentioned, cut it across the grain.....
I do a Rick Bayless marinade recipe.
Serrano, garlic, scallions, Adobo, oil, s&p.

And I grill it whole.

That Sounds Like A Solution

I Usually Toss The Whole Batch In At Once
Set It Aside, And Fry The Peppers & Onions
Not Too Chewy
But Not As Tender As I Would Like, Either
That Should Improve My Stroganoff Too
 


Totally wrong way to cook flank steak. (dumping in all at once)
Why?
1) It hinders browning, the moisture from a crowded pan will prevent the meat from browning.
2) Uneven cooking. No way is the meat going to be evenly cooked across all of the pieces.

Flash cook flank strips in small batches, it will cook in 3-4 minutes (NOT 7!!)... and you will have evenly cooked, properly browned steak.

I get a whole tenderloin when they go on sale, butcher it up, and use that in stroganoff.

Some For Steaks
Some For Roast
Some For All Round This & That

I Just Did One For Roast
(Bound w/Twine For Uniformity)
You Can Still Cut Off Steak Thicknesses
And Give Them A Quick Pan Sear

I'm Not As Stingy With A Dollar Anymore
But I Stretch That Dollar After I Spend It
 
Steak came out great. Salted it and got it to room temperature before grilling.

The sauce, just OK. Wouldn't make it again.
