killer....the panko gives it a texture ....you fry it just long enough for the panko to brown...perfect....not too mushy and not all googy....


i just used flour..then egg/milk wash...then panko crumbs....i used peanut oil on med high...be sure and drop the orka in piece by piece.....
 
Alton Brown had a fantastic segment on perfect method for frying okrah so it doesn't get slimey. It was a hoot - but the panko method sounds better.
