Chicken Amandine
1 sm onion, minced
6Tbsp butter
1/2 tsp curry powder
dash paprika
6 Tbsp flour
1 can cream of chicken soup
2c. milk
8 oz. shredded cheddar
2c. diced cooked chicken
1/2 c, blanched slivered almonds
2c. cooked rice
1c. sliced mushrooms
Buttered crumbs

*Saute onion in butter until translucent. Blend in curry powder, paprika, & flour. This will form a thick paste.
*Mix soup & milk. Add gradually to curry paste. Cook over med-low heat, stirring constantly until thickened.
*Add cheese. Stir until melted.
*Fold in chicken, almonds, rice, and mushrooms. Pour into greased oblong baking dish.
*Top with crumbs.
*Bake at 350, 30 min or until edges are bubbling and crumbs are lightly browned.

will try it Sunday..chickened out for the moment...LOL!
