Dehydrating

I wanna start smoking. I know how to do a sideways smoker grill, but I bought the upright thingy at a yard sale.

I had forgotten all about this thread, thanks for bringing it up

Is there a small cup or dish for in the bottom? With a small grate of some sort?

Hubs has one called a Smoking Vault(?), he always did the smoking and said that he'd put water in the dish in the bottom, then burn the chips on the grate over the dish of water. It would steam a bit to keep the meats moist.

I don't know about all that...….I just know the finished product was THE best.

He has smoked some jerkies (beef, venison & elk), but mostly salmon & ribs YUM
