Air isn't a clear void but a composite gas. And it's better thought of as a liquid than gas. When things like planes fly through the 'liquid' air it leaves a wake. If the air temperature is favorable (humid enough,) the plane's passage and wake is visible. It's why if you watch enough planes on enough variety of days, their wakes start and stop as they pass through and into/out of humid, less humid air.
