So my local friendly co-op had beet 'greens', for lack of a better term, not the beets themselves, but the beet tops.
Now I know how to deal with dandelion greens, kale, spinach, collard, rabbits (just checking to see if anyone is paying attention ) but am at a loss over the beet thingys.

HELP???

1. Wash thoughly and pat dry the leaves

2. Sautee them lightly in olive oil with garlic and spices to taste.

3. Feed them to a gourmet rabbit.

4. Find yourself some HUMAN food.

you can use them in a salad or steam them like spinach......all greens are basically cooked the same....here they kilt them...which is simply pouring hot bacon grease over them...

TY strollingbones.
The consensus seems to be that bacon grease makes everything taste better ;)

I love beets too, which is why just the beet tops were confusing to me.
Have never had beet pierogies though.
What am I missing???
