To make this super easy, you need an apple corer...but it could be possible to use a thin bladed knife. I didn't have any bacon, but usually I wrap a piece around the potato and secure it with a toothpick instead of coating with butter as salt like I did these.
First, core your potatoes. ^^^
Then cut the center section of the cores out, leaving a plug about 3/4 inch long (with the skin on) for each end.
Insert a plug in one end of the potato. vvv
Then fill the potato with the stuffing of your choice...these are sauteed portabellas and onions with shredded cheddar cheese. vvv
Replace the other plug, and slather with butter, bacon grease or as previously mentioned, wrap with bacon. vvv
Place in a 400 degree oven for 45 minutes to and hour, turning once. Squeeze test for doneness.
You can also smoke these on the BBQ indirect 350-400 degrees for 1 to 1.5 hours (this is where the bacon really shines). Any wood smoke or natural charcoal will do.
